Plant-based cheeses melt oddly, stretch reluctantly and often taste correct while behaving wrongly. The difficulty is not flavour but the specific protein that makes dairy cheese act the way it does.

Casein builds a network nothing else replicates

When milk is set, casein proteins link into a continuous three-dimensional mesh that traps fat and water inside it.

Heating loosens the bonds within that mesh without breaking it apart, so the mass softens, flows and then pulls into strands when stretched.

No plant protein forms this structure. Soy, pea and nut proteins set into gels that soften and then collapse or separate rather than flowing as a single body.

Melting and stretching are separate achievements

Flow can be produced with starch, which gelatinises in the presence of water and heat and gives a thick, spreadable mass.

Stretch requires long molecules that can align and slide past one another under tension, and starch alone tends to be short and brittle by comparison.

Products optimised for melting on a pizza are therefore usually starch-and-oil systems with little protein at all, which explains their mild flavour and their smooth, slightly gluey mouthfeel.

Fat behaviour has to be engineered

Milk fat softens gradually across a range of temperatures, which is why dairy cheese yields slowly on the palate rather than switching from solid to liquid.

Coconut oil, the common substitute, melts sharply within a narrow range, producing a product that is firm then suddenly oily.

Blending fats with different melting behaviours widens that range and is one of the clearest technical differences between early alternatives and current ones.

Flavour comes from time and microbes

Aged dairy cheese develops its character as enzymes and bacteria break proteins and fats into smaller, more aromatic fragments over months.

Plant versions can be fermented in the same way, using cultures on nut or seed bases, and those products taste closest to the original.

They are also the slowest and most expensive to make, which is why fermented plant cheeses sit in a different part of the shop from the melting blocks.

The category has split into two products

One branch chases performance: shredding, melting and browning on cooked dishes, accepting that the flavour will be modest.

The other chases character: cultured, aged, firm enough to slice, intended to be eaten as it is rather than melted over anything.

Judging either against a single idea of cheese misses that they are solving different halves of a problem dairy happens to solve at once.
