The stomach responds to volume before anything else

Stretch receptors in the stomach wall register how much physical material has arrived, and that signal begins before any nutrient has been absorbed.

Foods with high water and fibre content occupy much more space per calorie than dry, energy-dense foods, so they trigger that response sooner.

This is why a large plate of vegetables and a small pastry of equal energy produce entirely different sensations at the point of finishing.

Protein generates the strongest ongoing signal

Protein consistently produces greater and longer-lasting fullness than the same energy from carbohydrate or fat in controlled comparisons.

A meal that releases its energy gradually produces a flatter response than one absorbed quickly, and the return of hunger tends to track that curve.

Context is not a minor factor

Portion size, plate size, variety on the table and whether attention is elsewhere all measurably influence how much people eat before stopping.

Habit contributes as well, since meals eaten at consistent times produce anticipatory responses that arrive on schedule rather than on demand.

None of this makes calorie content irrelevant, but it explains why two meals that are equivalent on paper are not equivalent in the experience of eating them.
