Tempering — heating whole spices in hot fat until they release their aroma — appears at the start of many dishes and as a finishing step in others. The reason it works is straightforward and worth knowing.
Fat solubility
Most of the aromatic compounds in spices are fat-soluble rather than water-soluble.
Which means they dissolve into oil or ghee and disperse throughout a dish, rather than remaining locked in the spice.
Adding whole spices to a watery dish extracts far less, which is why the same quantity of spice produces a weaker result without tempering.
Heat and volatiles
Heating releases volatile compounds that are otherwise bound in the spice's cell structure.
Which is why the aroma appears suddenly rather than gradually, and why the moment of release is the signal to move on.
Continuing past that point degrades the compounds and produces bitterness, which is why burnt spices cannot be rescued.
The order matters
Different spices release at different rates and burn at different temperatures.

Which adds an aromatic layer that has not been cooked into the dish, so the volatile compounds are still present when it reaches the table.

Whole against ground
Whole spices retain their volatile compounds far longer, since the compounds are protected inside the intact structure.
Ground spices begin losing aroma immediately and are substantially degraded within months.
Which is why buying whole and grinding as needed produces a noticeably different result, and why old ground spice contributes colour without much flavour.
Toasting whole spices before grinding drives off moisture and develops flavour, and it is a separate step from tempering.
The fat matters
Ghee has a high smoke point and its own flavour, developed through the browning of milk solids during clarification.
Neutral oils carry the spice flavour without adding their own.
Mustard oil, used in some regions, is heated until smoking specifically to reduce its pungency, which is a deliberate step rather than an accident.
Coconut oil brings its own character and is used where that is wanted.
Practical points
Have everything ready before starting, since the sequence moves in seconds once the fat is hot.
Use enough fat that the spices are actually in contact with it, since a dry pan burns them.
Listen rather than watching — seeds popping and sizzling changes character as they are ready.
And take the pan off the heat a moment before you think you should, since residual heat continues the process.
Beyond one cuisine
The principle applies generally. Blooming spices in fat rather than adding them to liquid produces more flavour from the same quantity in any cooking tradition.
Which is why the technique appears independently in cuisines across the world, under different names and with different spices.
Storage
Volatile compounds are lost to heat, light and air.
Which means spices stored above a stove, in clear jars, in a warm kitchen are degrading fastest in exactly the place they are kept for convenience.
Airtight containers, away from heat and light, extend life substantially, and whole spices last several times longer than ground.
Buying smaller quantities more often is better than buying in bulk for anything used slowly.
Building a masala
Blends are proportion decisions rather than fixed recipes, and the proportions vary by region and by household.
Which is why the same named blend differs enormously between sources, and why commercial versions are a starting point rather than a standard.
Toasting and grinding a small batch takes ten minutes and produces something with an aroma that commercial blends cannot match after months on a shelf.
Heat and the chilli question

Asafoetida
Worth a note since it is misunderstood outside the cuisines that use it.
Raw it smells unpleasant. Tempered in hot fat for a few seconds it transforms entirely, contributing a savoury allium-like character.
Which means it must be cooked, and a pinch is sufficient.
Grinding
A dedicated grinder, or a mortar, produces a coarser and more varied texture than a blade grinder, which some cooks prefer for the way it releases aroma gradually during cooking.
