Most coffee problems reduce to one variable, and knowing which direction to move solves them. The variable is extraction.

What extraction is

Water dissolving soluble compounds out of ground coffee.

Different compounds dissolve at different rates. Acids come out first, then sugars, then bitter compounds.

Which means the order determines what a given brew tastes like.

Under-extraction stops before the sweetness develops, leaving acidity dominant — sour, sharp, thin.

Over-extraction continues into the bitter compounds — harsh, drying, hollow.

The diagnosis

Sour means under-extracted. Bitter means over-extracted.

Which is the whole diagnostic framework, and it is remarkably reliable.

The corrections are opposite, which is why guessing produces worse coffee rather than better.

Grind size

The most powerful variable.

Finer grounds have more surface area, so extraction happens faster.

Which means grinding finer increases extraction and grinding coarser reduces it.

Grind consistency matters as much as size — a grinder producing both very fine and very coarse particles simultaneously over-extracts the fine and under-extracts the coarse, producing coffee that is bitter and sour at once.

Which is why burr grinders outperform blade grinders substantially, and why a good grinder improves results more than a better brewer.

Time

Longer contact means more extraction, straightforwardly.

Which is the variable most easily adjusted in immersion methods, where the grounds sit in water.

In percolation methods, where water passes through, time is largely determined by grind size and flow, which is why grind is the primary control there.

Temperature

Hotter water extracts faster.

Which means temperature that is too low produces under-extraction regardless of time.

Water off the boil, rested briefly, is the usual recommendation, and precision here matters less than grind and ratio for most methods.

Ratio

Coffee to water, which determines strength rather than extraction.

These are separate — a brew can be strong and under-extracted, or weak and over-extracted.

Which is why adding more coffee does not fix sourness, and it is one of the most common confusions.

Weighing rather than measuring by volume is the change that makes results repeatable, since coffee volume varies with grind and bean.

Freshness

Coffee releases carbon dioxide after roasting, which interferes with water contact.

Very fresh coffee therefore extracts unevenly, which is why a rest period after roasting is recommended.

Beyond a few weeks, aromatic compounds degrade and the coffee becomes flat.

Which means the useful window is measured in weeks, and pre-ground coffee stales far faster since the surface area is enormous.

Water

Coffee is overwhelmingly water, and its mineral content affects extraction.

Very soft water extracts poorly. Very hard water produces flat coffee and scales equipment.

Which is why the same beans and method produce different results in different places, and it is a real variable rather than an obsessive detail.

The practical routine

Weigh the coffee and water. Keep everything constant except grind. Adjust grind based on whether the result is sour or bitter. Repeat.

Which converges quickly, and it is the whole method.

Roast level

Affects extraction as well as flavour.

Darker roasts are more soluble, extracting faster, which is why they can taste bitter at settings that suit lighter roasts.

Lighter roasts are denser and require finer grinding or longer contact to extract adequately.

Which means changing beans generally requires adjusting the grind, and it is why a setting that worked stops working.

Methods and what they suit

Immersion methods, where grounds steep, are forgiving and produce fuller body.

Pour-over methods produce cleaner results and require more control over pouring.

Espresso uses pressure to extract quickly from a fine grind, which makes it the least forgiving and most equipment-dependent.

Which means the method should follow how much attention you want to give it, and none is inherently superior.

Storage

Air, moisture, heat and light all degrade roasted coffee.

An airtight container at room temperature is adequate. The refrigerator introduces moisture and odours.

Freezing works for long-term storage in sealed portions, and repeated freezing and thawing does not.

Measuring extraction

Refractometers measure dissolved solids, allowing extraction to be calculated rather than guessed.

Which is how commercial operations dial in consistency, and it is unnecessary at home where tasting works.

The published target ranges are useful as a reference and are not prescriptive, since preference varies.

Milk

Heating milk denatures proteins and produces foam, and overheating destroys the sweetness by breaking down lactose.

Which is why milk heated too far tastes flat and slightly scalded, and the practical limit is well below boiling.

Water temperature in practice

Most kettles without temperature control produce water that is close enough once it has stood for thirty seconds off the boil.

Which means precision equipment is optional rather than necessary for good results.

Dose consistency

Weighing the coffee rather than scooping removes the largest source of day-to-day variation, and inexpensive scales are entirely adequate.

Which is where most people should start, ahead of any equipment upgrade.
